Homemade Honey Butter Bread
Ingredients
2 ¼ teas. Instant Yeast
¼ cup of Honey
2 ¼ cups of Water
6 ½ cups White Unbleached Bread Flour (I use King Arthur)
2 tbls. Whole Milk
2 tbls. Salt
2 tbls. Melted Butter
2 tbls. Avocado Oil
Directions
1) In a large bowl add your water at a lukewarm temp. If I am being honest, I do not use a
thermometer or anything to intricate, but more like a touch of the water with my hand
to make sure its not too hot or too cold. Next, add your Honey into the bowl and mix
with a whisk until it is dissolved. After your Honey has dissolved in the water you can
sprinkle your yeast on to the top. I whisk mine into the water and honey mixture to
make sure it dissolves. Once you have completed these steps, the yeast will go to work
on its own. Give it about 5-10 minutes to work its magic and create a bubble over foam
top look (this is how you know the yeast has activated and is ready to go to work in your
bread!)

2) Add all your flour into a separate bowl and whisk together with your salt.
3) Pour the activated yeast mixture into your bowl of flour and add the milk, and Avocado
Oil. You can now mix with a wooden spoon or whatever utensil you work with best by
hand. It does not require a lot of mixing (maybe a minute to combine evenly). If you
choose to, you can also use your hands (I give it a good squeeze with my hands to make
sure everything comes together fully.)

4) Once all of these have been mixed into a ball leave the ball of dough in the bowl, and
cover with a towel or plastic wrap (or like me a pan). Let it sit for about an hour or until
it doubles in size.

5) Once the Dough has doubled in dump it on your counter or work surface and knead into
a ball and cut it in half.

6) Once you have two separate piles of dough, flour your counter, and knead each into
rectangular shapes and add to a buttered bread pan. You will now need to cover these
and let them rise again for another hour.


7) Pre Heat your Oven to 420 degrees and move the oven rack to the lowest level.
8) Once your bread loaves have risen completely add to the oven and cook for 30 min –
then pull out to brush with melted butter and add back into the oven for another 10-15
min or until golden brown.
9) Remove from the Oven and let sit for about 15 min and then gently side swipe the bread
pans with a butter knife to release the bread from the edges of the pan, and lightly pull
the bread out of the pans. It can rest for about 15 minutes. You can then wrap in plastic
and should last about week (or a day if your family is like mine.

10) Enjoy at room temp for a sandwich or toasted with butter and jelly for breakfast.
